Ingredients
  

Oatmeal Base

  • 3 cups old-fashioned rolled oats
  • 1.5 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 0.25 teaspoons ground nutmeg
  • 0.75 teaspoons salt
  • 0.5 cups lightly packed brown sugar more to taste if you like things a bit sweeter
  • 2.5 cups milk
  • 2 large eggs
  • 1 teaspoon vanilla extract

Optional Add-Ins

  • nuts or raisins optional, add to dry ingredients

Baking Instructions

  • Lightly grease a baking pan with nonstick cooking spray and set aside. Preheat the oven to 325 degrees F.
  • In a large bowl, whisk together the oats, baking powder, cinnamon, nutmeg, salt, and brown sugar.
  • In a large liquid measuring cup or medium bowl, whisk together the milk, eggs, and vanilla.
  • Pour the milk mixture over the dry ingredients and stir or whisk to combine.
  • Arrange diced apples evenly in the baking dish and pour the oatmeal mixture over the top.
  • Bake for 35-45 minutes until the top is golden and the mixture is set.
  • Serve warm or at room temperature with milk poured over the top, if desired.

Notes

If making ahead and refrigerating overnight, apples may brown slightly. You can omit apples for a standard version. Adjust baking time based on pan size.
