Ingredients
  

Dough

  • 4 cups flour 400g
  • 1 cup warm milk 200ml
  • 1 whole egg
  • 65 g softened butter
  • 10 g instant yeast
  • 3 tablespoons sugar 60g
  • 1 packet vanilla sugar
  • 1 pinch salt

Apple Filling

  • 2 whole apples peeled and diced
  • 2 tablespoons brown or white sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon cornstarch
  • 0.5 cup water

Cheesecake Filling

  • 200 g cream cheese
  • 2 tablespoons sugar
  • 1 packet vanilla sugar

Crumble Topping

  • 1 tablespoon butter 20g
  • 1 tablespoon sugar
  • 0.5 cup flour

Egg Wash

  • 1 whole egg yolk

Glaze

  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions
 

Dough Preparation

  • Combine all the dough ingredients in a large bowl and knead until you have a soft, elastic dough. Cover and let rise for about 1 hour, until doubled in size.

Apple Filling Preparation

  • Melt the butter in a pan, add the diced apples, sugar, and cinnamon. Cook until the apples soften, then mix cornstarch with water and add to the pan. Cook for another 2 minutes until thickened. Set aside to cool.

Cheesecake Filling Preparation

  • Mix the cream cheese, sugar, and vanilla sugar in a bowl until smooth and creamy. Set aside.

Shaping Buns

  • Once the dough has risen, divide into 9 portions and shape into balls. Place on a baking sheet, cover, and let rise for another 15 minutes.

Crumble Preparation

  • Mix the butter, sugar, and flour until it forms a crumbly texture.

Assembling Buns

  • Press the center of each dough ball with a glass, brush edges with egg yolk, fill with cheesecake and apple filling, and sprinkle crumble on top.

Baking

  • Bake in a preheated oven at 180°C (350°F) for 20-25 minutes until golden brown.

Glazing

  • Once cooled, drizzle the glaze over the buns and allow to set before serving.

Notes

These buns are best served fresh, but can be stored in an airtight container for a few days.
