  • 272 g flour all-purpose wheat flour
  • 400 g sugar granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoon cinnamon
  • 4 pcs eggs
  • 8 pcs grated carrots medium-sized, do not buy pre-grated carrots
  • 225 g sunflower oil

Frosting Ingredients

  • 226 g Philadelphia cheese
  • 1 teaspoon vanilla extract
  • 453 g powdered sugar
  • 115 g soft unsalted butter room temperature

Instructions
 

Cake Preparation

  • Mix flour, sugar, baking soda, salt, and cinnamon.
  • In a separate large bowl, beat the eggs until frothy.
  • Slowly integrate the oil into the eggs while beating.
  • Gradually add the flour mixture to the oil and egg mixture.
  • Mix well until fully incorporated.
  • Fold in the grated carrots and mix well.
  • Pour into a greased container and choose to make one or two layers.
  • Bake in a preheated oven at 175 degrees for 30-35 minutes.

Frosting Preparation

  • Beat all frosting ingredients until creamy.
  • Wait for the cakes to cool and spread frosting on top.
  • Stack the cakes if applicable and enjoy!

Notes

For texture, some prefer to add chopped nuts or blend the carrots to a puree for better incorporation. Ensure the cake is cool before applying frosting to avoid melting.
