Dough Ingredients

  • 350 g flour
  • 2 pieces eggs
  • 40 g sugar
  • 120 ml warm milk
  • 12 g fresh yeast or 5 g dry yeast
  • 1 pieces lemon zest
  • 5 g salt
  • 30 g softened butter
  • finishing sugar for coating

Preparation Steps

  • Dissolve the yeast in warm milk.
  • In a mixing bowl, combine flour, sugar, salt, and zest. Add the eggs and milk with yeast.
  • Knead the dough until it's homogeneous. When it pulls away from the sides, gradually add the butter and continue kneading until well incorporated. Cover and let rise until doubled in size.
  • Using a rolling pin, roll out the dough on a lightly floured surface. Cut out doughnuts and place them on a tray, cover and let rise for 30 minutes.
  • Heat oil to 190°C, immerse the doughnuts, and cook for about 1 minute on each side. Drain on paper towels and coat with sugar.

Notes

These beignets are best served fresh and warm.
