Baking Instructions

  • Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or use paper liners.
  • In a medium bowl, mix the dry ingredients: flour, baking soda, baking powder, cinnamon, and a pinch of salt.
  • In another bowl, beat the wet ingredients: eggs, sugar, pumpkin puree, and vegetable oil.
  • Gently fold the dry ingredients into the wet ingredients. Be careful not to overmix.
  • Scoop the batter into the muffin cups, filling them about three-quarters full.
  • In a small bowl, mix the cream cheese filling: softened cream cheese, powdered sugar, and vanilla extract.
  • Spoon a heaping tablespoon of the cream cheese filling into each muffin batter.
  • Bake the muffins for 18-22 minutes. They’re done when a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the tin for 5 minutes. Then, transfer them to a wire rack to cool completely.

Notes

For the best taste, let the muffins cool completely before serving. Store them in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week. To reheat, warm in the microwave for 15-20 seconds.
