Ingredients
  

Cheese

  • 200 g block of cheese (cheddar or tasty), cut into slices Different widths for random ribbons throughout!

Herb and garlic swirl

  • 2 tablespoon fresh rosemary, finely chopped
  • 2 tablespoon fresh parsley leaves, finely chopped
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried thyme
  • 2 cloves garlic, crushed Using garlic press or finely grated
  • 3 tablespoon extra virgin olive oil
  • 0.5 teaspoon cooking salt / kosher salt Halve for fine table salt

Dry Ingredients

  • 2.25 cups plain flour (all-purpose flour)
  • 1 teaspoon baking soda (bi-carbonate soda) Sub 3 ½ teaspoon baking powder
  • 0.75 teaspoon cooking salt / kosher salt Halve for table salt

Wet Ingredients

  • 0.5 cup plain yogurt Greek or regular (full fat, unsweetened)
  • 0.75 cup milk Full fat best, low fat okay
  • 2 large eggs Approximately 50-55g/2oz each
  • 3.5 tablespoon unsalted butter, melted
  • 2 tablespoon olive oil
  • 2 cloves garlic, crushed Using garlic crusher or grated

Instructions
 

Preparation

  • Preheat oven to 180°C/350°F (both fan and standard ovens)
  • Grease a 21 x 11 x 7 cm loaf pan lightly with butter or oil spray then line with baking paper
  • Mix the herb and garlic swirl ingredients in a small bowl to form a thick dollop-able mixture
  • Whisk the dry ingredients in a bowl
  • Whisk the wet ingredients in a separate bowl
  • Make a well in the center of the dry ingredients. Pour the wet ingredients in and mix until just combined

Layering

  • Pour ⅓ of the batter into the bread tin. Dollop ⅓ of the herbs across the top and swirl it in
  • Use ⅓ of the cheese slices and push them randomly into the batter
  • Repeat twice more with remaining batter and herbs, pushing some cheese slices all the way in

Baking

  • Bake for 30 minutes or until the top is golden. Cover with foil and bake for a further 20 minutes
  • Check to ensure the center is cooked by inserting a skewer; it should come out clean
  • Cool in the loaf tin for 5 minutes then transfer to a cooling rack and allow to cool for at least another 10 minutes before cutting thick slices

Notes

You can substitute fresh herbs with dried herbs, or use pesto instead for the herb and garlic swirl. Cheese can be shredded or in slices.
