Chicken

  • ½ cup all-purpose flour
  • 1 teaspoon salt or to taste
  • ½ teaspoon pepper freshly ground, or to taste
  • 3 large eggs
  • ¼ cup vegetable oil
  • 4 pieces chicken breasts boneless and skinless, cut in half lengthwise

Sauce

  • 1 large lemon sliced into thin rounds, seeds removed
  • 1 cup chicken broth low sodium
  • ½ cup white wine dry
  • 1 tablespoon lemon juice freshly squeezed
  • 1 tablespoon all-purpose flour
  • 2 tablespoon butter unsalted
  • 2 tablespoon parsley chopped, for garnish

Cooking Instructions

  • In a shallow dish, mix flour, salt, and pepper. In another dish, beat eggs. Dip chicken in flour mixture, then egg, and fry until golden brown.
  • Sauté lemon slices, add broth, wine, lemon juice. Whisk in flour and butter until thickened.
  • Place chicken in the sauce, simmer briefly, then serve garnished with parsley.

Notes

You can adjust the amount of lemon juice and wine in the sauce to suit your taste preferences. For a lighter version, you can use olive oil instead of vegetable oil for frying the chicken.
