Ingredients
  

Protein

  • 2 cups cooked chicken diced

Vegetables

  • 1 cup peas
  • 1 cup carrots diced
  • 1 cup onion diced
  • 3 stalks green onions sliced

Grains

  • 4 cups cooked rice preferably day-old

Condiments

  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil

Eggs

  • 2 large eggs beaten

Instructions
 

Cooking Steps

  • Heat the oil in a wok over medium-high heat.
  • Add onions and cook until translucent.
  • Stir in the carrots and peas, and cook for about 2 minutes.
  • Push the vegetables to the side and add the beaten eggs.
  • When the eggs are scrambled, mix everything together.
  • Add the cooked chicken and rice to the mixture.
  • Pour in the soy sauce and sesame oil, and stir well.
  • Top with green onions before serving.

Notes

For best results, use cold, day-old rice to prevent clumping.
