Ingredients
  

Marinade

  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon lime juice
  • 0.5 teaspoon chipotle chili powder adjust to taste

Chicken and Sandwich

  • 1 pound boneless skinless chicken breasts about 2 breast halves
  • 4 slices Monterey Jack cheese small slices
  • 4 sets hamburger buns
  • 1 avocado peeled, seeded and sliced
  • Iceberg or lettuce of preference
  • Mayonnaise

Instructions
 

Preparation

  • In a shallow bowl, stir together the olive oil, lime juice, and chipotle chile powder.
  • Place the chicken breasts between two sheets of wax paper and pound to an even thickness of about ½ inch.
  • Place the chicken breasts in the marinade, turning to coat, cover with plastic wrap, and let marinate for at least 15 minutes, preferably an hour.
  • Heat your grill on high heat or prepare coals for direct heat. Grill the chicken pieces a couple of minutes on each side until cooked through, adding a slice of cheese to the chicken once flipped.
  • Toast the buns on the grill as well.
  • Assemble the sandwiches with the bun bottom, chicken with melted cheese, avocado, lettuce, and mayonnaise on the top bun.

Notes

Adjust chipotle chili powder to control the heat level.
