Pineapple Chicken Filling
- 1 large chicken breast, boneless, skinless
- 1.5 cups fresh pineapple chunks
- 0.5 red onion
- 2 cloves fresh garlic or 2 teaspoon garlic powder
- 1 teaspoon honey
- 0.25 tablespoon chipotle seasoning mild
- 0.5 teaspoon ground black pepper
- 1 teaspoon salt
- taco shells soft or hard shell (homemade is best)
- fresh cilantro optional
Preparation
Line a baking sheet pan with parchment paper and preheat the oven to 425 degrees.
Dice the onion and cut the pineapple into chunks (you can substitute for frozen pineapple if needed).
In a small bowl mix together salt, pepper, and chipotle seasoning. Set aside.
Baking
Place chicken breast on a sheet pan along with onions and pineapple chunks.
Mince garlic cloves over top of chicken, onions, and pineapple.
Sprinkle seasoning mix over everything on the sheet pan focusing on the chicken.
Drizzle honey over everything on the sheet pan.
Bake for 25 minutes or until the chicken is fully cooked.
Assembling Tacos
Remove from oven, dump chicken off of parchment paper and onto the pan. Shred chicken with 2 forks.
Grab tortillas and fill them with a generous amount of the baked chipotle pineapple chicken.
Finish them off with an optional topping of fresh cilantro and a dollop of sour cream if you desire. Enjoy!
