Mixing Bowl
- 1 cup cottage cheese
- 1 cup rolled oats
- ½ cup applesauce or grated apple
- 1 large egg
- ½ teaspoon cinnamon
- 1 tablespoon honey or maple syrup optional, for added sweetness
- ½ teaspoon baking powder
- pinch salt
Preheat your oven to 350°F (175°C) and grease a mini muffin pan or line it with mini muffin liners.
In a mixing bowl, combine cottage cheese, oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup, baking powder, and salt. Mix until well combined.
Allow the batter to sit for 5 minutes to let the oats absorb some moisture, making the bites fluffier.
Scoop the mixture evenly into the mini muffin pan, filling each cup almost to the top. Bake for 18-20 minutes or until the bites are set and lightly golden on top.
Let the bites cool in the pan for a few minutes before transferring to a wire rack to cool completely. Enjoy warm or store in the fridge for up to 4 days.
