Ingredients
  

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • ½ cup applesauce or grated apple
  • 1 large egg
  • ½ teaspoon cinnamon
  • 1 tablespoon honey or maple syrup optional, for added sweetness
  • ½ teaspoon baking powder
  • pinch salt

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a mini muffin pan or line it with mini muffin liners.
  • In a mixing bowl, combine cottage cheese, oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup, baking powder, and salt. Mix until well combined.
  • Allow the batter to sit for 5 minutes to let the oats absorb some moisture, making the bites fluffier.
  • Scoop the mixture evenly into the mini muffin pan, filling each cup almost to the top. Bake for 18-20 minutes or until the bites are set and lightly golden on top.
  • Let the bites cool in the pan for a few minutes before transferring to a wire rack to cool completely. Enjoy warm or store in the fridge for up to 4 days.
