Ingredients
  

Crusts

  • 1 normal crust pie crust OR use gluten free crust option

Filling

  • 2 cups heavy cream
  • ½ cup granulated sugar plus 2 tablespoon for topping
  • ½ teaspoon salt
  • 2 units vanilla beans insides scraped out
  • 6 units egg yolks

Preparation

  • Make the pie dough. Follow instructions for normal crust or gluten free version. Chill the dough for 30 minutes before rolling out.
  • Preheat the oven to 400°F. Roll out the dough 2 inches past the pie pan, crimp edges, and bake with weights for 15-20 minutes.
  • Make the custard filling by combining heavy cream, sugar, salt, and vanilla in a pot. Heat and whisk together.
  • In a separate bowl, whisk egg yolks and slowly mix in the heated cream. Pour filling into the crust and bake at 300°F for 35-45 minutes.
  • Cool at room temp for 1 hour, then refrigerate for 4 hours or overnight. Before serving, top with sugar and caramelize with a torch.

Notes

The pie can be made up to 3 days in advance. Ensure to properly cool and refrigerate for a smooth custard texture.
