Sweet Potato Fries Ingredients

  • 2 pounds sweet potatoes about 2 medium-large or 3 medium
  • 1 tablespoon cornstarch
  • 0.5 teaspoon fine sea salt
  • 2 tablespoons extra-virgin olive oil
  • optional spices freshly ground black pepper, cayenne pepper and/or garlic powder

Baking Instructions

  • Preheat the oven to 425°F with racks in the lower and upper thirds of the oven. Line two large, rimmed baking sheets with parchment paper.
  • Peel the sweet potatoes and cut them into fry-shaped pieces about ¼" wide and ¼" thick. Transfer the fries to the baking sheets.
  • Sprinkle the fries with cornstarch and salt. Toss until coated, then drizzle with olive oil and toss again until no powdery spots remain.
  • Arrange the fries in a single layer and bake for 20 minutes, then flip them to cook evenly on all sides.
  • Swap the positions of the baking sheets and bake for another 10 to 18 minutes until crispy.
  • Toss with optional seasonings, serve warm!

Notes

These fries are best served fresh and hot, but leftovers keep well in the fridge for up to 4 days. Reheat in an oven to retain crispness. Sweet potatoes can be prepared up to 2 days in advance to avoid browning.
