Ingredients
  

Chicken and Coating

  • 5 tablespoon vegetable oil
  • 2 units eggs lightly beaten
  • 3 tablespoon cornflour (cornstarch)
  • 10 tablespoon plain flour (all-purpose)
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon garlic salt
  • 2 teaspoon paprika
  • 3 units chicken breast fillets chopped into bite-size chunks

Sauce

  • 1 tablespoon sesame oil optional - can be omitted
  • 2 cloves garlic peeled and minced
  • 1 tablespoon Chinese rice vinegar or white wine vinegar
  • 2 tablespoon honey
  • 2 tablespoon sweet chilli sauce adjust to taste
  • 3 tablespoon ketchup
  • 2 tablespoon brown sugar
  • 4 tablespoon soy sauce

To Serve

  • boiled rice
  • 2 tablespoon sesame seeds
  • small bunch spring onions/scallions chopped

Instructions
 

Cooking Steps

  • Heat the oil in a wok or large frying pan until very hot.
  • Whilst the oil is heating, place the egg in one shallow bowl and the cornflour in another. Add the flour, salt, pepper, garlic salt and paprika to another bowl and mix together.
  • Dredge the chicken in the cornflour, dip in the egg, then dredge in the seasoned flour. Add to the wok and cook for 6-7 minutes, turning occasionally until well browned.
  • Remove from the pan and place in a bowl lined with kitchen towels.
  • Add all of the sauce ingredients to the hot wok, stir and bubble on high heat until the sauce reduces by a third.
  • Add the chicken back in and toss in the sauce to coat. Cook for another 1-2 minutes.
  • Turn off the heat and divide between four bowls. Serve with boiled rice and top with sesame seeds and spring onions.

Notes

Double the ingredients if you want extra sauce.
