Ingredients
  

  • 1 ¾ cups all-purpose flour spooned and leveled for accuracy
  • 1 teaspoon baking soda to give that nice rise

  • ½ teaspoon salt to balance the sweetness
  • 1 tablespoon pumpkin pie spice or mix your own with cinnamon, nutmeg, and cloves
  • 1 cup granulated sugar for just-right sweetness
  • ½ cup brown sugar packed, for a hint of molasses depth
  • 1 cup pumpkin puree not pumpkin pie filling
  • 2 large eggs at room temperature for better mixing
  • ½ cup vegetable oil for moisture
  • 1 teaspoon vanilla extract for a warm, sweet note

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a muffin tin.
  • In a mixing bowl, combine the dry ingredients: flour, baking soda, baking powder, salt, and pumpkin pie spice.
  • In another bowl, whisk together the granulated sugar, brown sugar, pumpkin puree, eggs, vegetable oil, and vanilla extract.
  • Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Pour the batter into the prepared muffin tin, filling each cup about two-thirds full.
  • Bake for 20-22 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the pan for a few minutes before transferring to a wire rack.
