Ingredients
  

Cucumber and Seasoning

  • ¾ cup English cucumber, partially peeled (striped)
  • 1 teaspoon kosher salt, divided
  • 4 to 5 cloves garlic, peeled, finely grated or minced start with 1 to 2 if you prefer less garlic
  • 1 teaspoon white vinegar
  • 1 tablespoon Greek Extra Virgin Olive Oil preferably Early Harvest
  • 1 cup plain Greek yogurt
  • Fresh dill or mint, chopped (optional) handful
  • ¼ teaspoon ground white pepper
  • Warm pita bread for serving
  • Sliced vegetables for serving

Instructions
 

Preparation

  • Use a box grater to grate the cucumbers or a small food processor to finely chop them. Toss with ½ teaspoon kosher salt and squeeze dry using a cheese cloth.
  • In a large mixing bowl, place garlic with remaining ½ teaspoon salt, white vinegar, and olive oil. Mix to combine.
  • Add the grated cucumber to the bowl with the garlic mixture. Stir in yogurt, pepper, and fresh herbs (if using). Stir to combine well.
  • Cover and refrigerate for 30 minutes to a couple hours before serving to thicken and meld flavors.
  • When ready to serve, stir the tzatziki sauce and transfer to serving bowl. Drizzle with more olive oil if desired. Serve with veggies or pita.

Notes

This recipe makes a generous 2 cups of sauce. Best stored in the fridge in a tightly-covered container. Use within 4 days.
