Equipment

Ingredients
  

  • ½ cup oats
  • 1 egg
  • 2 ½ tablespoon yogurt
  • 1 teaspoon vanilla
  • 1 tablespoon honey
  • a pinch baking soda
  • 1 teaspoon coconut oil or butter

Instructions
 

  • Grind the oats using a nut grinder or a food processor.
  • In a small bowl, mix the yogurt with the baking soda, until fluffy - you should see bubbles come up.
  • Then add in the eggs, vanilla and a bit of honey.
  • Then stir in the oats and let the mixture sit for a bit, so that the oats can soak.
  • Preheat a non-stick pan, you'll need low to medium temperature. Cover the surface with coconut oil or butter.
  • Using a big spoon or a ladle start making small pancakes, leaving some space in between, so that you can flip them easily when ready.
  • When the edges of the pancakes look done and bubbles start to come up it's time to flip the pancakes, carefully, but quickly.
  • Serve immediately with your favorite toppings!

Notes

The original recipe required 1 teaspoon of baking soda, and while many liked it, it can make the pancakes bitter. A pinch of baking soda or some baking powder is recommended instead.
