Ingredients
  

For the dough

  • ½ cup whole milk lightly warmed
  • 2 tablespoons granulated sugar
  • 1 envelope active dry yeast or instant yeast (2 ¼ teaspoons)
  • 4 tablespoons unsalted butter melted and lightly cooled
  • 1 large egg room temperature
  • 1 large egg yolk room temperature
  • 2 cups all purpose flour
  • 1 teaspoon kosher salt

For the filling

  • 4 heads garlic tops cut off to expose individual cloves
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter softened to room temperature
  • ¼ cup chopped parsley
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 cups shredded mozzarella cheese preferably thick-cut

For the topping

  • 2 tablespoons butter melted
  • 1 tablespoon chopped parsley
  • 1 tablespoon freshly grated parmesan cheese plus more for garnish
  • 1-2 teaspoons minced garlic

Instructions
 

For the dough

  • Warm the milk to around 110°F. Combine warmed milk, sugar, and sprinkle yeast on top. Let it sit for 7-10 minutes.
  • Add melted butter, egg, egg yolk, flour, and salt. Knead on medium speed for 6-8 minutes until smooth.
  • Shape the dough into a ball, place in a greased bowl, cover, and let rise until doubled in size, about 1-2 hours.

Roasting garlic

  • Preheat oven to 400°F. Peel outer skin of garlic bulbs. Drizzle with oil and roast wrapped in foil for 30-40 minutes.
  • Once cool, extract roasted garlic cloves and set aside.

Assembly

  • Once dough has risen, punch it down and roll out into a 13×8-inch rectangle. Prepare filling by processing roasted garlic.
  • Spread softened butter over the dough, then garlic paste, parsley, salt, pepper, and cheese. Roll into a log.
  • Cut the log into 9 pieces. Place in a baking dish lined with parchment, cover, and let rise for another 1-2 hours.

Baking

  • Preheat oven to 350°F. Bake rolls for 30-35 minutes until golden brown.
  • Combine melted butter, parsley, parmesan, and minced garlic in a bowl. Brush over baked rolls and garnish.
