Ingredients
  

  • 3 pounds small white or red potatoes
  • 3 tablespoons olive oil https://amzn.to/3BDOnXU
  • 2 tablespoons minced garlic about 6 to 7 cloves
  • 2 tablespoons fresh parsley or other herbs
  • 1 teaspoon salt https://amzn.to/3MRI09X
  • 0.5 teaspoon black pepper

Instructions
 

  • Preheat your oven to 400°F. Cut the potatoes in half or quarters and place them in a mixing bowl with the olive oil, minced garlic, parsley, salt, and pepper.
  • Toss everything together until well coated.
  • Transfer the potatoes to a sheet pan and spread them out on one even layer. Roast the potatoes for 45 to 55 minutes, stirring halfway through, until golden and browned.
  • Transfer the potatoes to a serving bowl. If you'd like, sprinkle a little extra parsley on top before serving.

Notes

To store for the week, keep in an airtight container in the fridge for 4 to 5 days. For freezing, freeze on a baking sheet first and then transfer to a freezer-safe bag. Reheat in the microwave or air fry for extra crispiness.
