Ingredients
  

Chicken and Potatoes

  • 1 lb chicken breasts cut into cubes
  • 4-5 small/medium russet potatoes washed, peeled, and cut into cubes
  • to taste olive oil for coating potatoes
  • to taste salt for seasoning
  • to taste pepper for seasoning
  • to taste garlic powder for seasoning
  • to taste paprika for seasoning
  • 2 tablespoon butter
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1-2 tablespoon minced garlic
  • to taste Buffalo Wild Wings Garlic Parmesan Sauce for coating chicken
  • 1 cup shredded mozzarella cheese

Instructions

  • Wash potatoes, peel them, and cut them up into small cubes.
  • Toss the potatoes with olive oil, salt, pepper, garlic powder, and paprika.
  • Cook the potatoes in the air fryer at 400 degrees F for about 25 minutes, shaking them around at least a couple of times.
  • Once the potatoes are halfway through cooking, cut the chicken into cubes.
  • Cook the chicken in a skillet on medium-high heat with 2 tablespoon of butter.
  • Season the chicken with ½ teaspoon each of salt and pepper, 1 teaspoon each of paprika, onion powder, and Italian seasoning.
  • Once the chicken is cooked, add minced garlic and the Parmesan Garlic sauce to coat the chicken.
  • Add the crispy cooked potatoes to the skillet and stir well.
  • Top with shredded mozzarella cheese.
  • Broil in the oven for just a few minutes to melt the cheese or cover it with a lid until it melts.
  • Top with dried parsley and additional Parmesan Garlic sauce if desired. Enjoy!

Notes

If you don't have an air fryer, you can cook the potatoes in the oven at 400 degrees F for about 30 minutes. Stir the potatoes around a few times while cooking.
