Ingredients
  

Chicken and Marinade

  • 1-1½ lb chicken breasts or thighs, cubed
  • 3 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1-2 teaspoon no salt added lemon pepper seasoning
  • ½ teaspoon salt
  • ¼ cup lemon juice

Garlic Parmesan Butter

  • 4-6 tablespoon butter
  • 3 cloves garlic, minced
  • ¼ cup parmesan, grated
  • 2 teaspoon lemon juice, optional
  • 3 tablespoon fresh parsley, chopped fresh cilantro will also work
  • 1 small lemon, sliced for garnish optional

Instructions
 

Preparation

  • In a large bowl, add cubed chicken. Ensure even size chunks for even cooking. Add olive oil, lemon juice, and seasonings. Mix well to coat the chicken. Marinate for 15 minutes to 4 hours covered in the fridge.
  • Skewer the chicken on wooden or metal skewers and lay them on a flat baking sheet. In a saucepan on low, melt the butter and add minced garlic, simmering for 2 minutes. Set aside warm.
  • Preheat the grill on Medium/high to 400°F. Add skewers directly to the grill and cook for about 8-10 minutes, turning often. Add parmesan and fresh herbs to the cooled garlic butter.
  • Let the skewers sit on the grill for about 2 minutes on each side, rotating and brushing with the garlic parmesan butter. Once chicken reaches 165ºF, take it off the grill. Rest on a baking sheet and brush with leftover garlic parmesan butter and squeeze of lemon before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. Can be frozen for up to 2 months.
