Chicken and Broth
- 2 lbs boneless, skinless chicken thighs
- 6 cloves garlic thinly sliced
- 3 inches ginger peeled, finely chopped
- 1 bundle scallions thinly sliced, whites and greens separated
- 4 teaspoon kosher salt
- freshly ground white or black pepper to taste
- 10 cups water
Noodles and Vegetables
- 8 oz dried curly ramen-style noodles
- 1 cup sliced carrot cut into thin matchsticks
Sauce to Finish
- ¼ cup black rice vinegar
- ¼ cup soy sauce
- 2 tablespoon toasted sesame oil
- crispy chili oil to taste
Cooking Instructions
Bring the chicken, garlic, ginger, scallion whites, salt, pepper and water to a boil in a pot. Reduce heat and simmer, uncovered, until chicken is very tender, about 15 minutes.
While the soup simmers, whisk together the vinegar, soy sauce and sesame oil in a bowl, and add chili crisp to taste.
Remove the chicken with tongs and transfer to a cutting board. Add noodles and carrot to the broth. Shred the chicken into bite-sized pieces. Once noodles are done, return chicken to pot and rewarm for 1 minute. Adjust seasoning as needed.
Divide soup between bowls. Add a handful of scallion greens and drizzle each bowl with 1 tablespoon of soy sauce mixture, adding more to taste.
