Ingredients
  

Salmon and Marinade

  • 3 pounds slab of salmon cut in half
  • 1 14-ounce can pineapple tidbits or rings reserve some for topping
  • ¼ cup pineapple juice
  • 2 tablespoons melted unsalted butter or ghee
  • 2 tablespoons sesame oil
  • 1 tablespoon lemon juice
  • 1 tablespoon light brown sugar plus an additional ½ cup for caramelizing
  • 1 ½ tablespoons honey
  • 1-2 large garlic cloves minced
  • 1 small onion diced, optional
  • 3-4 leaves fresh mint chopped, for garnish
  • 1 teaspoon sea salt
  • 1 teaspoon smoked paprika
  • teaspoon white pepper
  • 2 tablespoons unsalted butter for caramelizing, optional

Instructions
 

Cooking Steps

  • Preheat oven to 400° F.
  • Remove the salmon from the packaging and pat dry with paper towels. Cut the salmon into two even pieces.
  • Cover the bottom of a large sheet pan with aluminum foil or parchment paper.
  • Place the pineapple tidbits or rings on top of the foil in rows of 2 and place the salmon on top.
  • Chop the remaining pineapple and add to a small bowl.
  • Complete the marinade by mixing chopped pineapple, melted butter, sesame oil, pineapple juice, lemon juice, honey, light brown sugar, minced garlic, smoked paprika, white pepper, and sea salt.
  • Spread the marinade over the top of the salmon and let marinate for 15 to 30 minutes in the fridge.
  • Bake the salmon in the oven for 25 to 30 minutes or until the internal temperature reaches 145° F, covering with foil to retain moisture if needed.
  • Remove salmon from oven and let rest for 10 minutes.

Notes

Optional: To caramelize the pineapple topping, cook it with butter, pineapple, brown sugar, and chopped onion in a skillet until golden brown, about 10-15 minutes.
