Ingredients
  

  • 1.5 cups flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon cinnamon
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 large beaten egg
  • 1 cup milk
  • 1 cup cooked crumbled bacon
  • 0.25 cup maple syrup
  • 2 tablespoons oil canola oil preferred
  • 1 teaspoon vanilla

Instructions
 

  • Combine dry ingredients in a medium mixing bowl; set aside.
  • In a separate bowl, combine beaten egg, milk, bacon, maple syrup, canola oil, and vanilla.
  • Pour egg mixture into dry ingredients and stir to combine.
  • Spoon batter into greased muffin tins, filling each tin ⅔ full.
  • Bake at 400 degrees for 15 minutes or until golden brown.
  • Drizzle with additional maple syrup, as desired.

Notes

These muffins can be served warm and are great for breakfast or brunch.
