Ingredients
  

Chicken

  • 4 pieces boneless skinless chicken breasts
  • 2 tablespoons butter
  • salt to taste
  • pepper to taste
  • 2 teaspoons Italian seasoning

Rice

  • 1 cup uncooked white rice
  • 2.25 cups chicken broth (low sodium recommended)
  • 1 juice lemon from 1 lemon
  • 1 teaspoon Italian seasoning

Cooking Steps

  • Melt butter over medium heat in a large skillet. Season chicken with salt, pepper, and Italian seasoning. Brown chicken for 1-2 minutes on each side and then transfer to a plate.
  • Add rice, chicken broth, lemon juice, and remaining Italian seasoning to the pan. Place chicken on top, cover, and simmer over medium-low heat for 20-25 minutes until liquid is dissolved.
  • Garnish with fresh parsley or cilantro and lemon wedges before serving.

Notes

If using bone-in, skin-on chicken, increase browning time to 3-4 minutes per side. Ensure chicken reaches an internal temperature of 165°F. For brown rice, increase cooking time to 30-35 minutes. This recipe keeps for up to 3 days in the fridge or 3 months in the freezer.
