Ingredients
  

Chicken and Toppings

  • 2 large boneless, skinless chicken breasts
  • 1 cup fresh basil pesto store-bought or homemade
  • 4 pieces flatbread store-bought or homemade
  • 1 cup shredded mozzarella cheese
  • ½ cup cherry tomatoes halved
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions
 

Preparing the Chicken

  • Preheat your oven to 400°F (200°C).
  • Pat the chicken breasts dry with paper towels and season both sides with salt and pepper.
  • In a large skillet, heat olive oil over medium-high heat and cook the chicken for about 6-7 minutes on each side until golden brown and cooked through (165°F or 75°C).
  • Remove the chicken from the skillet and let it rest for about 5 minutes.
  • After resting, slice the chicken into thin strips.

Preparing the Flatbread

  • Prepare flatbreads on a baking sheet or make your own using flour, water, and salt.
  • Spread a generous layer of basil pesto over each piece of flatbread.

Assembling the Flatbread

  • Distribute sliced chicken evenly over the pesto-covered flatbreads.
  • Sprinkle shredded mozzarella cheese over the chicken, followed by halved cherry tomatoes.
  • Finish with grated Parmesan cheese on top.

Cooking Process

  • Bake the assembled flatbreads in the preheated oven for about 10-12 minutes until cheese is melted and edges are golden brown.
  • Optionally broil for an extra crispy top for 1-2 minutes, watching closely to prevent burning.

Serving the Pesto Chicken Flatbread

  • Remove flatbreads from the oven and let cool for a minute before slicing.
  • Slice into quarters or halves and garnish with fresh basil leaves if desired.
  • Serve warm, ideal with a side salad or dipping sauce.
