Ingredients
  

Dough & Filling

  • 2 teaspoons Platinum Yeast from Red Star
  • 1 Tablespoon granulated sugar
  • ¾ cup whole milk
  • 3 Tablespoons unsalted butter melted
  • 1 large egg
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning blend
  • 2 and ¾ cups bread flour spooned & leveled, plus more as needed
  • 1 and ½ cups shredded mozzarella cheese
  • ½ cup chopped pepperoni or more cheese

Topping

  • ½ cup shredded mozzarella cheese
  • ¼ cup chopped pepperoni or more cheese
  • 4 ounces uncooked ground Italian sausage optional
  • cup chopped green pepper optional
  • 2 Tablespoons sliced black olives optional

Garlic Herb Butter for Brushing

  • 2 Tablespoons butter melted
  • ½ teaspoon Italian seasoning
  • ½ teaspoon garlic powder

Instructions
 

Making the Dough

  • Place the yeast and sugar in the bowl of a stand mixer fitted with a dough hook or paddle attachment. Heat the milk until warm to touch, about 110°F. Pour warm milk on top of yeast/sugar. Whisk gently to combine and let it sit for 5–10 minutes until frothy.
  • Add melted butter, egg, salt, garlic powder, Italian seasoning, and about 1 cup of the bread flour. Beat on low speed for 1 minute to combine ingredients, then add remaining flour and beat until the dough comes together, about 2 minutes.
  • Knead the dough by hand or using the mixer for an additional 5 minutes until soft and slightly sticky.
  • Place the dough in a greased bowl, cover, and allow to rise until doubled in size, around 60–90 minutes.

Preparing and Baking

  • Grease a baking pan and prepare the filling by mixing mozzarella and pepperoni.
  • Once the dough is ready, punch it down, form pieces of dough into balls, fill with cheese and pepperoni, and place in the prepared pan.
  • Cover and allow to rise again for about 30–45 minutes until puffy.
  • Preheat oven to 350°F and bake for 20 minutes. Add toppings and bake for another 12–15 minutes until lightly browned.
  • Melt butter and mix with garlic powder and Italian seasoning. Brush on warm rolls and serve.

Notes

For serving, consider pizza sauce, chopped fresh basil, and crushed red pepper flakes.
