Ingredients
  

  • 15 oz pumpkin puree
  • 2 cups all-purpose flour
  • 1 cup sugar
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt

Instructions
 

  • Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  • In a large bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  • In another bowl, mix pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract until smooth.
  • Add wet ingredients to dry ingredients and stir until just combined.
  • Divide batter evenly among muffin cups.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool before serving.
