Ingredients
  

Pizza Dough

  • 4 cups Italian 00 flour 1.1 lb/500g
  • 2 teaspoon fast action dried yeast 7g
  • 1.33 cups lukewarm water 320ml
  • 1 tablespoon olive oil Extra virgin recommended
  • 1 pinch salt
  • 0.5 teaspoon sugar
  • semolina or regular flour for dusting

Toppings

  • 2 balls mozzarella 250g
  • 0.5 cup gorgonzola 100g
  • 0.5 cup goat cheese 120g
  • 0.5 cup parmesan freshly grated, 40g
  • 0.5 cup crushed strained tomatoes passata, 200g
  • Black pepper optional

Instructions
 

Make the pizza dough

  • Put the flour, salt and yeast in a bowl, ensuring that salt and yeast are on opposite sides.
  • Make a well in the center and add the water and olive oil. Mix until a rough dough forms, adding more flour if too sticky.
  • Dust a clean surface with flour and knead the dough for around 10 minutes until smooth and elastic.
  • Add ½ tablespoon of olive oil to a large bowl, coat it, and place the dough in it, rubbing the top with more oil.
  • Cover with plastic wrap and leave in a warm place for 3-4 hours until tripled in size.

Bake the pizza

  • Preheat the oven to your highest setting (at least 450F/230C) and heat up your baking trays.
  • Cut the dough into 2 or 4 pieces and roll out or shape to fit your baking tray.
  • Sprinkle the baking tray with semolina or flour, then carefully place the pizza dough on top.
  • Spread the pizza base with tomato sauce and evenly sprinkle cheese on top. Bake for 10-15 minutes until melted and golden.

Notes

Use extra virgin olive oil for best flavor. Recommended brands for canned tomatoes include Cirio or Mutti.
