Ingredients
  

Pasta

  • 1 lb. fettuccine
  • kosher salt

Shrimp

  • 1 lb. shrimp, peeled and deveined tails removed

Sauce

  • 3 Tbsp. butter divided
  • 2 cloves garlic, minced
  • 2 Tbsp. all-purpose flour
  • 1 cup heavy cream
  • ½ cup whole milk
  • 1 each egg yolk
  • 1 cup Parmesan cheese, grated plus more for garnish
  • 1 Tbsp. chopped parsley for garnish
  • freshly ground black pepper

Cooking Instructions

  • In a large pot of boiling salted water, cook fettuccine according to package instructions; drain, reserving 1 cup of pasta water.
  • In a large skillet over medium heat, melt 1 tablespoon of butter. Add shrimp, season with salt and pepper, and cook until pink and opaque, about 2 to 3 minutes per side. Remove shrimp and set aside.
  • In the same pan, add the remaining 2 tablespoons butter and garlic. Cook until fragrant, about 1 minute. Whisk in flour and cook for 2 minutes. Stir in heavy cream and milk; whisk in the egg yolk.
  • Bring sauce to a low simmer and whisk in Parmesan until melted and slightly thickened. Add cooked pasta and shrimp, tossing to combine. Adjust sauce consistency with reserved pasta water if needed. Season with salt and pepper.
  • Garnish with more Parmesan and parsley before serving.
