Ingredients
  

Puffs Filling

  • 4 strips thick-cut bacon chopped or crumbled
  • 8 ounces reduced-fat cream cheese Neufchâtel, cut into large pieces
  • 2 large eggs divided
  • ½ teaspoon garlic powder
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon dried oregano
  • 10 ounces frozen spinach (1 package) thawed and thoroughly pressed dry
  • ½ cup crumbled feta about 2 ounces
  • ¼ cup finely grated Parmesan about 1 ounce
  • 2 sheets frozen puff pastry (9- or 10-inch) thawed overnight in the refrigerator

Instructions
 

Preparation

  • Place racks in the upper and lower thirds of your oven and preheat to 400°F. Bake bacon according to directions for Baked Bacon. Let cool, then chop or crumble into bits. Spray muffin tins with nonstick spray.
  • In a microwave-safe bowl, heat the cream cheese in 10 second bursts until soft and melty. Stir in 1 egg, garlic powder, black pepper, and oregano, mixing until well combined.
  • In a large bowl, combine spinach, feta, Parmesan, and chopped bacon. Scrape the cream cheese mixture on top and stir until combined. Adjust seasoning as desired.
  • Unfold the first sheet of puff pastry on a floured surface and roll to remove creases. Cut into 9 squares and line muffin cups with the pastry.
  • Scoop the spinach filling into each muffin cup. Bring the points of the pastry squares together to cover the filling and press lightly. Beat the remaining egg and brush it over the tops of the pastry.
  • Bake the puffs for 21 to 24 minutes, until golden. Cool for 10 minutes before serving.

Notes

Puffs can be frozen for up to 1 month. Filling can be made in advance and stored in the refrigerator. Best enjoyed the day they are made.
