  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1.25 cups sugar

Wet Ingredients

  • 15 oz pure pumpkin can or homemade puree

  • 2 large eggs
  • 1 tablespoon sugar for topping

Baking Instructions

  • Preheat your oven to 350°F (175°C) and prepare muffin pans with liners.
  • In a bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice; set aside.
  • In an electric stand mixer bowl, combine pure pumpkin puree, vegetable oil, eggs, and 1 ¼ cups sugar; mix on low until well blended.
  • Gradually add the dry mix into the wet ingredients; stir until just combined.
  • In a small bowl, mix cinnamon and remaining sugar for topping.
  • Fill muffin cups about two-thirds full with batter and sprinkle with cinnamon sugar.
  • Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
  • Cool for five minutes in pans before transferring to a wire rack.
