Ingredients
  

  • 2 cups cherry tomatoes, halved
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • ¼ cup capers, rinsed and drained
  • ½ small red onion, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • to taste salt
  • to taste pepper
  • for garnish fresh basil or parsley optional

Instructions
 

  • In a large mixing bowl, combine the halved cherry tomatoes, chopped artichoke hearts, capers, and red onion. Give it a good stir!
  • In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  • Pour the dressing over the salad and toss gently to coat everything evenly.
  • If you want to add a little flair, toss in some fresh basil or parsley for garnish.
  • Serve immediately, or let it chill in the fridge for about 20 minutes to let the flavors meld together.

Notes

Storing leftovers? Pop them in an airtight container and keep them in the fridge for up to 3 days. For a milder onion flavor, soak the finely chopped red onion in cold water for 10 minutes before adding it to the salad. This salad also pairs fantastically with grilled chicken or fish if you’re looking to add protein!
