Ingredients
  

Zucchini Skewers

  • 2 medium zucchini squash
  • 2 medium summer squash
  • 3 tablespoons chopped fresh herbs (parsley, basil)

Lemon Garlic Butter

  • 6 ounces unsalted butter
  • 3 cloves garlic (minced)
  • 2 teaspoons fresh lemon zest
  • 0.25 teaspoon crushed red pepper flakes
  • pinch salt
  • pinch pepper

Instructions
 

Preparation

  • Preheat the grill to medium-high heat. If using a grill pan, spray or brush it with olive oil.
  • Stand each zucchini up at its base and use a vegetable peeler from the top down to create thin ribbons of squash.
  • Lay the ribbons out on a baking sheet or cutting board in a single layer.
  • Brush the lemon butter over one side of the squash and skewer them.
  • Place on the grill, cooking for 2-3 minutes before rotating.
  • Remove the skewers and brush with more lemon butter, then sprinkle with fresh herbs.

Lemon Garlic Butter

  • Combine all the lemon garlic butter ingredients in a saucepan and heat over low until bubbling.
  • Remove from heat and use immediately.

Notes

Use a vegetable peeler or mandolin for best results when slicing zucchini. Adjust quantities of zucchini for thicker or thinner skewers.
